Duck Penne Recipie

Recipe Instructions:

Step 1: Chop up onion, garlic, tomatoes, bell peppers, and mushrooms, place in pan (add a coating of olive oil in pan first). Caramalize on high heat. Add sausage (optional).If you want a smokey, crunchy texture on duck, add with the veggies. If not, go with next step.

Step 2: Take the tomatoe paste, add 1 can of water and olive oil(mix up).
When veggies are caramalized, add the tomatoe paste mix. Now add oregano, basil, salt, black pepper, red pepper, and red wine vinegar. Cook in medium heat for about 25 minutes. Stir throughout the 25 minutes. If it gets too hot lower. Then around 15 minutes, simmer on low. If the sauce thickens add a little water. Now, take the duck meat, drain and mix with sauce.

Step 3: Tip
Add more condiments to your taste. Remember this, you can never add too much olive oil and oregano/basil!

Warning: add peppers a little at a time. One might find my measurments to be a lot. So be careful, it can get real spicy. I love my food super spicy! I'm hispanic! lol. Heck, I even add more red pepper at the table.

Step 4: Follow the instructions on back of box of penne. When penne is "al dente" add the butter and parmasen cheese (don't forget to drain pasta first). If you want to add more parmesan, go ahead. Sprinkle some oregano and basil.

When ready, add the duck/sauce over penne. Serve with fresh basil as garnish. Add a nice salad, some italian hard bread, and a bottle of wine!

Ingredients:

2 cups or more of shredded duck/goose white/dark meat or both.
1 box of Penne (Barilla)
2 ripe tomatoes chopped
1 bell pepper (green)
1 bell pepper (red)
1 whole onion
1 cup of chopped mushrooms
3 cloves of garlic minced
1 cup of olive oil(this will be used throughout all cooking)
1-2 tablespoon of red wine vinegar
1 teaspoon sea salt
1 1/2 teaspoon salt
1 tablespoon black Pepper
2 tablespoon crushed red pepper
1 tablespoon oregano
1 tablesppon basil
Fresh basil (garnish)
1/2 stick Butter
3 tablespoons of parmesan cheese
1 can of tomato paste
1 italian sausage minced (optional)
